Cinnamon

Cinnamon is a spice obtained from the inner bark of several tree species, Cinnamon is the name for several species of trees and the commercial spice products that some of them produce.
Where does cinnamon come from?
Cinnamon is derived from the inner bark of various evergreen trees of the genus Lauraceum. Although hundreds of trees belong to the Lauraceae genus, only a few are involved in the production of cinnamon. Cinnamon is grown on plantations in Asia, the West Indies, and South America.Some countries include Sri Lanka, India, Bangladesh, Myanmar, China, Vietnam, and Indonesia.
How does cinnamon grow?
Cinnamon originally grows as the inner bark of evergreen trees. It takes at least two years for these trees to grow enough for cinnamon to be harvested sustainably and responsibly.
How is cinnamon harvested?
When cinnamon is harvested, the outer bark of the tree is peeled and scraped away to expose the inner bark. The larger pieces cut from the inner bark are turned into cinnamon powder, and the thinner parts are sun-dried and turned into cinnamon sticks.

Types of Cinammon

There are two types of cinnamon. Ceylon (originated in Sri Lanka and often used in Mexican cooking) and Cassia (usually grown in China, Vietnam, and Indonesia).Kolinche, grown in Indonesia, is the most common type of cinnamon sold in the United States and has a sweeter, smoother flavor. There are three types of Cassia cinnamon: Indonesian cinnamon, Chinese cinnamon, and Saigon cinnamon, each with a different flavor and optimal situation. Indonesian cassia is the sweetest and mildest type of cassia cinnamon and is the most common in the United States. Cassia, on the other hand, has a strong bitter taste. Chinese cassia is less common in the United States and is primarily used medicinally in China. And then there's Saigon Cassia. This has a strong aroma and aroma, almost spicy, and is generally our favorite type of cassia.
